Originally from Beaujolais, Philippe Pacalet was profoundly influenced by his uncle, Marcel Lapierre, a leading figure in the natural wine movement. After managing Domaine Prieuré-Roch for a decade, Philippe established his own estate in 2001 in Beaune, aiming to produce authentic wines that fully express the Burgundy terroir.
A Terroir-Respectful Approach
Without owning vineyards, Philippe Pacalet carefully selects plots cultivated using organic and biodynamic methods. He collaborates closely with growers who share his vision, ensuring that each grape reflects its natural environment. This approach results in wines of great purity and remarkable elegance.
Minimalist Winemaking Practices
In the cellar, Philippe adopts a philosophy of minimal intervention. Fermentations are conducted with native yeasts, and vinifications occur with whole clusters in open wooden vats. The use of sulfur is avoided during fermentation, and the wines are aged in French oak barrels, with a moderate proportion of new wood to preserve the expression of fruit and terroir. This method yields vibrant wines that faithfully reflect their origin.
